1 tbsp olive oil or butter• 2–3 cups fresh spinach (or 1 cup frozen, thawed and drained)• 2–4 large eggs• 1/4 cup shredded mozzarella, cheddar, or feta cheese• 1 small garlic clove, minced (optional)• Salt and pepper, to taste• Red chili flakes (optional, for a kick)
Préparations :
1. Heat oil or butter in a non-stick skillet over medium heat.2. Add garlic (if using) and sauté for 30 seconds. Then add spinach and cook until wilted (2–3 minutes for fresh; 1 minute for thawed frozen).3. Make small wells in the spinach with a spoon and crack the eggs into them.4. Cover the skillet with a lid and cook for 3–5 minutes, or until eggs are cooked to your liking (less time for runny yolks).5. Sprinkle cheese over the top during the last minute of cooking so it melts.6. Season with salt, pepper, and chili flakes.
