1 bell pepper (any color), chopped into 1-inch pieces

1 red onion, chopped into 1-inch pieces

2 cups pineapple chunks (fresh or canned, drained)

Sauce

½ cup teriyaki sauce

2 tablespoons pineapple juice

1 tablespoon olive oil

1 tablespoon honey or brown sugar

2 cloves garlic, minced

½ teaspoon ground ginger (optional)

Salt & black pepper, to taste

Optional Garnish

Sliced green onions

Sesame seeds

🍽️ Directions

1️⃣ Preheat the Oven

Preheat oven to 400°F (200°C).
Line a large sheet pan with parchment paper or foil for easy cleanup.

2️⃣ Prep the Chicken

Place chicken cubes in a large bowl. Season lightly with salt and pepper.
