Cowboy meatloaf and potato casserole

Ingredients :

For the Meatloaf:lb ground beef1/2 cup breadcrumbs1 egg1/4 cup milk1 small onion, finely chopped2 cloves garlic, minced1/4 cup barbecue sauce1 tbsp Worcestershire sauce1 tsp salt1/2 tsp black pepperFor the Potato Topping:4 cups mashed potatoes (you can use instant or make your own)1/2 cup sour cream1/4 cup milk1 cup shredded cheddar cheese4 slices bacon, cooked and crumbled2 green onions, chopped (optional)Salt and pepper to taste

Préparations :

Preheat Oven:Preheat your oven to 375°F (190°C).Prepare the Meatloaf:In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until everything is well combined.Press the meatloaf mixture into a greased 9×13 inch baking dish, spreading it evenly.Bake the Meatloaf:Bake in the preheated oven for about 20 minutes.Prepare the Mashed Potatoes:While the meatloaf is baking, prepare the mashed potatoes. If you are making them from scratch, boil peeled and chopped potatoes until tender, then mash with sour cream, milk, salt, and pepper until smooth. If using instant mashed potatoes, prepare according to the package instructions and then mix in the sour cream, milk, salt, and pepper.Assemble the Casserole:Remove the meatloaf from the oven after 20 minutes. Spread the mashed potatoes evenly over the top of the meatloaf.Sprinkle the shredded cheddar cheese over the mashed potatoes.Sprinkle the crumbled bacon on top of the cheese.Bake the Casserole:Return the dish to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.Garnish and Serve:Remove the casserole from the oven and let it sit for a few minutes.Garnish with chopped green onions if desired.Serve hot.Enjoy!
